I live in a small town in Costa Rica and my markets don’t always have all of your ingredients so I substitute. I’ve made this twice now and it’s a favorite. We don’t have cheesy tortellini (or any refrigerated pasta here) so I boil elbow noodles al dente and add them in to the slow cooler when there is about 45 minutes left. Tastes delicious! I love that many of the ingredients are used across several of the recipes, and that it’s all real stuff I can get at my local grocery store without breaking the bank. Thank you for the healthy & delicious ideas! For all newbies out there, these ARE easy, but triple the prep time. I feel like “prepared quinoa” as an ingredient is a little deceptive when it takes 30 minutes just to prepare the quinoa. You can, however, prepare an entire pot of quinoa at once and then use it for several recipes. I love that many of the ingredients are used across several of the recipes, and that it’s all real stuff I can get at my local grocery store without breaking the bank.
