WHAT IS COCONUT BUTTER?

Contrary to coconut oil, coconut butter is very different and is not technically an oil. Coconut butter is the whole coconut meat that has been processed into a liquid butter. It will harden back up after coming back to room temperature. Whereas coconut oil is purely the fat separated from the coconut meat. The 2 are very different and will react very differently in baking. Coconut oil is a clear color, whereas coconut butter is an off white color. Additionally, coconut butter gets much more hard at room temperature or in the fridge, than coconut oil does.

Since I like to avoid using oil in my baked goods, I like to use coconut butter for richness. It yields a very buttery result. You can buy coconut butter in the stores or make Homemade Coconut Butter. 2 store brands I like are the Nutiva and Maranatha brands.

You can use it for vegan baked desserts or no-bake desserts or simply spread it on some fresh toast or even pancakes, it will melt immediately and taste amazing. Unless, of course, you don’t like coconut, haha.
