  • 5 - 7 apples
  • 3/4 cup sugar (or to taste)
  • 3 tablespoons instant tapioca OR 2 tablespoon cornstarch
  • 1/8 teaspoon salt
  • 3 teaspoons apple pie spice
  • 2 tablespoons butter, melted

Instructions

  1. Prepare homemade pie crust or use store purchased pie crust (top and bottom crust needed)
  2. In a large mixing bowl, pare and cut apples into thin slices.
  3. In a separate mixing bowl combine sugar, instant tapioca, salt and apple pie spice; mix together well. Sprinkle over apple slices; stir.
  4. Pour apples into a 9-inch pie crust; cover with top crust and trim and shape edges. With a knife, make 4 - 5 slits in the top crust for ventilation. Brush with butter.

  6. Serve warm with a scoop of cinnamon or vanilla ice cream or dollop of freshly whipped cream.

Notes

For more tartness use Granny Smith apples or add 1 tablespoon lemon juice to your sliced apples. My mother likes to pre-cook her apples with a little water on the stove-top. She drains off any excess liquid before adding the sugar and other ingredients. To make your own apple pie spice combine: 1 1/2 teaspoons ground cinnamon +1/4 teaspoon ground nutmeg +1/8 teaspoon ground allspice +pinch of ground cloves
