Skip the canned cranberry sauce and make a batch of homemade cranberry sauce instead. It's one of the easiest things to make this staple for your holiday meal.

Fresh cranberries will start to appear in stores early November and sometimes as soon as late October. If you pick up a few bags of cranberries, you can even freeze them for later.

What should cranberry sauce taste like?

Homemade cranberry sauce has the following characteristics:

  • It's tart and tangy
  • Because cranberries are naturally very tart, you'll want to sweeten them. but be sure not to add too much sweetener.
  • It should balance and complement the rest of your Thanksgiving meal

Ingredients you'll need

You only need a few ingredients to make cranberry sauce.

  • Raw cranberries: You'll need a 12-oz bag of fresh cranberries, which is approximately 3 cups of berries.
  • Maple syrup: To naturally sweeten the cranberry sauce.
  • A cinnamon stick or ground cinnamon
  • Zest from orange
  • Juice from orange:- this makes about ¼ cup of orange juice
  • Sea salt: a pinch of salt to add flavor
  • Water

Pro-Tip: While some cranberry sauce recipes use just water and skip the orange juice, I recommend using both. The juice adds flavor and helps cut down the bitterness from the cranberries.

How to make homemade cranberry sauce

Once you have the ingredients, making the cranberry sauce takes only 20 minutes using the following steps:

1. Combine ingredients: In a medium saucepan, combine cranberries, water, cinnamon, orange zest, maple syrup, and salt. Squeeze in the juice from one orange.

To store: Store in the refrigerator for a few weeks in an air-tight container.

To reheat: If you'd like to reheat the sauce later, warm in a saucepan over medium heat.

Making ahead of time

This sauce can be made up to a week in advance. Be sure to store it in an air-tight container in the refrigerator.

FAQs

How to enhance cranberry sauce? ›

Adding a teaspoon or two of fresh lemon or orange zest, a tablespoon of chopped candied peel, or even a splash of juice to your canned sauce will brighten flavors and bring in some homemade flavor.

How do you take the bitterness out of homemade cranberry sauce? ›

"Instead, start by stirring in one tablespoon maple syrup and one teaspoon of a sweet drink like apple juice, orange juice, or fruity white or red wine. Add more to taste. Sprinkle with a pinch of salt (in small amounts, it intensifies sweetness)."

Why didn t my homemade cranberry sauce thicken? ›

Try reducing the sauce down even further so more of the liquid cooks off and the mixture thickens. If that doesn't work, add a thickener like gelatin, pectin or a cornstarch slurry (cornstarch whisked into juice or water). Let the sauce cool before refrigerating to completely set.

What role do sugar and water play in making cranberry sauce? ›

Instead, the pectin polymers will bind to each other, giving the cranberry mixture more and more structure. The sweet sugar-water molecules get trapped in between the pectin chains, resulting in a tasty cranberry sauce!

How do you fix bland cranberry sauce? ›

Maple syrup, brown sugar and even honey can make your cranberry sauce more dynamic. And don't forget the spices! Cinnamon sticks, whole cloves, citrus zest and star anise all work well with cranberries and can be added while the sauce cooks to infuse your sauce with flavor.

How do you make 100% cranberry juice taste better? ›

If you'd prefer, you could use simple syrup, coconut sugar, cane sugar, sugar-free sweetener, maple syrup, or raw honey. You could also omit the added sugar and make an unsweetened cranberry juice if you'd prefer. Fresh Citrus: oranges and lemons add sweet and acid to balance the cranberries tartness.

What thickens cranberry sauce? ›

The sauce will thicken as it cools. If you want a cranberry mold that holds its shape, continue to boil the mixture so that more pectin is released from the fruit, additional water evaporates, and the sauce becomes thick enough to set into a firm gel.

Why does my homemade sauce taste bitter? ›

Leaf states that this can be due to burning the sauce in the pot or simply dealing with a batch of produce that are overly acidic or metallic from canning or cooking. This can also come from under-ripe or low-quality tomatoes, as well as stirring in a hefty amount of tomato paste, per Boss The Kitchen.

Why do my cranberries taste bitter? ›

Cranberries are generally considered safe whether they are cooked or raw. However, because of their notoriously bitter, sharp taste, most people prefer not to eat them raw or unsweetened. This bitterness is due to the high tannin content of cranberries.

How do you fix cranberry sauce that didn't gel? ›

If you have followed these instructions, and for some reason the sauce still won't gel, add 1 envelope of unflavoured gelatin to the sauce and bring to a hard boil, stirring frequently.

How to tell when cranberry sauce is done? ›

Pull the sauce off the stove once you hear or see the first few cranberries burst. You want some of them to burst but others to remain whole for the best texture. The sauce can be made up to 1 week in advance; keep refrigerated, and do not add the nuts until Thanksgiving Day, a few hours before serving.

How to tell if cranberry sauce is bad? ›

If you open the can and the sauce appears discolored, or the smell or taste seems off, go ahead and toss it.

What is the difference between cranberry sauce and jellied cranberry sauce? ›

The major variation you're likely to come across is "whole berry" versus "jellied." The only difference between them is that the jellied sauce is cooked until the berries have completely broken down. They both slide out of the can as a wobbly red cylinder.

Why is the label upside down on a can of cranberry sauce? ›

But why? Ocean Spray says this is to get the cranberry sauce out in one intact piece. “The rounded part of the can that looks like the bottom has an air bubble in it,” Ocean Spray's representative explains. The bubble is there so you can “break the seal the sauce makes with the can.”

Does cranberry sauce have too much sugar? ›

First, most traditional cranberry sauces have lots of added sugar, so offer to make it yourself for the holiday gathering so you can control how much is added. Or, only take a small amount, about one or two tablespoons, and pair it with the turkey or other vegetables for a balanced meal.

How do you sweeten cranberry sauce after cooking? ›

Try A Softer Sweetener

In lieu of granulated sugar, try genuine maple syrup. It's already liquid so it will stir right into the cranberry sauce, lending it a gentle sweetness.

What can I do with a jar of cranberry sauce? ›

Method
  • Spread generously in toasties, classic with brie!
  • Add Cranberry Sauce to your crumble for a full flavoured dessert.
  • Mix with cream cheese for a tasty topping on crackers and bagels!
  • Dollop a spoonful on baked sweet potato in place of butter.
  • Top off your yoghurt with a spoonful for extra fruity flavour!

Can you melt down jellied cranberry sauce? ›

A can of cranberry sauce typically contains cranberries, high fructose corn syrup, corn syrup, and water, so when you plop it into a pot on low heat, it is going to melt down into an almost jam-like consistency, but that's not all that is going to change.
