How far ahead can I bake pumpkin pies, and how do I storethem?
Will my mother-in-law freak out if they get baked Thursday morning and sit on the counter all day? Refrigerator space will be at a premium.

You can bake your pumpkin pies a month in advance and freeze them. Oops — you don't have a month. A week in advance then. Or even two days if refrigerator space is tight. If they are baked Thursday morning, they can sit out on the counter. But since a pumpkin pie has a moist filling, consider a graham cracker or nut crust instead of traditional pastry, as it will be less likely to become soggy. A bit of last-minute oven-warming won't hurt.
